Tasks to stay for more than 30 days

I would like for tasks to stay for more than 30 days (possibly have a preference to choose how long I want that task there) but not automatically remove it.

Tom I would prefer a manual option to remove tasks- I think they should remain indefinetley until manually deleted. I just want to make sure I dont drop the ball on anyone and if they leave in 30 days. Yes the tasks where I follow up with clients after a certain time are almost always more than 30 days away.
